Cherry Macadamia Nut Bars

OOOOh Geeeze, what a treat. These are LOADED with goodness, protein, omegas, all the good fats, antioxidants and some dried fruit. These only take a few minutes of prep and can be kept in the fridge for an anytime of the day pick-me-up. Let’s dive into it!

For the filling:

1.5C Dates

1.5C Cherries

1.5C Almonds

.5C Shredded coconut

1T Flax

1T Chia

1T Hemp seed 

.5 Maca 

Blend almonds until you have a chunky almond meal, you want some that are bite sized. Next add in the rest of the ingredients and blend until you have a bar like constancy.  Line your pan with parchment paper and spread your mix evenly utilizing a spatula. 

For the chocolate sauce:

1/2C cacao butter

1C cacao powder

1/2 teaspoon sea salt

1/2 cup maple syrup

Top with:

Tahini drizzle (optional)

Hemp seeds

For the chocolate sauce, add cacao butter in a pot and on a low heat.  Slowly add in the rest of the cacao powder, salt and maple. When doing this, make sure you are on a low heat. Mix until you have a smooth sauce then drizzle over your filling. Set aside in the fridge for 30mins or so. Drizzle tahini on top if you are feeling it and enjoy!
